About the Role

Join the iconic Hotel del Coronado as a Senior Sous Chef and lead our culinary team in delivering exceptional dining experiences. This Senior Sous Chef role offers a unique opportunity to work in one of the last surviving wooden Victorian beach resorts, recently renovated with a $400M investment. Located on Coronado Island, just minutes from Downtown San Diego, this stunning property features over 750 rooms and 10 diverse food and beverage outlets.

What You'll Do

  • Oversee all culinary functions, ensuring exceptional food quality and driving menu innovation.
  • Manage food and labor costs through effective forecasting, purchasing, inventory control, and waste reduction.
  • Lead full-cycle recruitment efforts, including hiring, onboarding, training, and performance management.
  • Create and manage team member schedules to ensure optimal staffing levels while controlling labor expenses.
  • Establish and maintain standardized recipes and preparation methods to ensure consistency across all outlets.
  • Ensure compliance with health, sanitation, and food safety regulations.
  • Monitor kitchen equipment and coordinate maintenance to support uninterrupted operations.
  • Analyze operational performance and implement process improvements to increase efficiency and profitability.

Requirements

  • Proven experience in luxury hotels, with a strong background in culinary operations.
  • Experience leading a unionized team is preferred.
  • Demonstrated ability to manage multiple outlets effectively.
  • Strong leadership skills with a focus on mentorship and team development.
  • Excellent communication and interpersonal skills.
  • Ability to work in a fast-paced, high-volume environment.
  • Commitment to maintaining the highest standards of safety, consistency, and efficiency.
